Larger than a paring knife and smaller than a chef's knife, the Shun Blue Petty is ideal for medium-sized tasks. It nimbly cleans silver skin from tenderloins and portions boneless proteins with ease. The Shun Blue Petty is just the right size for sectioning citrus, from grapefruit to limes. Use it in hand to peel a potato, but then use the same knife to slice the potato for au gratin. It's handy for board work and provides good knuckle clearance. It beautifully stems and seeds peppers, shaves garlic, and makes itself generally useful for any task that requires accuracy, agility, and efficient cutting.

The series includes traditional Japanese blade shapes that are essential for preparing the proteins, as well as a selection of all-purpose tools every kitchen needs. These exciting knives feature a carbon steel cutting core for a razor-sharp edge and quick re-sharpening. For easier care, the "blue" carbon steel core is sandwiched between two layers of mirror-polished stainless steel. But note that these knives will need additional care to protect the edge from rust. The beautiful grey PakkaWood handles are a variation on a traditional Japanese design for a secure and comfortable grip.
