This salt incorporates San Pablo worms that were harvested from wild plants in the Central Valley of Oaxaca with hand-harvested, pure sea salt. The worms are collected individually, fed with fruit, then toasted on the comal before being lightly salted. Highly concentrated in flavor, the worms add a delicate umami. For some mild heat, it is infused with dried Pasilla Mixe chiles, a smoked Oaxacan delicacy.
