About the instructor:

Luis has worked in multiple facets of the restaurant industry for nearly two decades. Many of those years were spent working in the pizza industry. 

Growing up in the South Bronx, pizza was a huge part of daily life for Luis. After a career hiatus from pizza, Luis found himself missing the pizza industry and decided to start his own pizza business. In the summer of 2019 he founded Peels On Wheels pizza, a mobile pizzeria, to bring his style of pizza to his city. This fully mobile concept made Neapolitan style pizzas that were hand stretched, topped and baked in under five minutes right in front of customers - for the freshest pizza possible. Luis has continued to expand his pizza knowledge to cover many different styles of pizza and loves sharing his pizza knowledge with others. Located in Rochester, New York - Peels on Wheels grew in the summer of 2021 with the opening of the "Pizza Garage". The Pizza Garage now offers New York Style pizza among other delicious offerings for takeout.

When looking to expand beyond just Italian style pizzas’ the School of Italian Pizza knew they had a perfect teacher in Louis. Living in both Powder Springs, GA and Rochester New York, he was a natural choice to bring New York style pizza to students, and his expansive knowledge of pizza making knowledge also allows him to teach nearby Michigan’s Detroit Style pan pizza.
