In this two-hour hands-on class, ZWILLING Executive Chef Bernard Janssen will guide you through the fundamentals of great knife skills while helping you master the prep work that makes holiday cooking smoother, safer, and more enjoyable.

Learn what makes a quality knife, how to choose the right blade for each task, and how to properly sharpen, clean, and store your knives for lifelong performance.

You’ll practice the essentials using seven different blade shapes, mastering:

  1. The circular rocking and chopping motions

  2. How to dice an onion like a pro

  3. How to supreme citrus fruits

  4. How to mince herbs efficiently

  5. How to handle a flexible fillet knife

By the end, you’ll have the skills to make your prep work faster, safer, and more fun.

Knife Skills Class: German vs. Japanese Cutlery 12:30PM — 3PM

Elevate your culinary skills with our new Knife Skills Class, where we explore the artistry and functionality of German and Japanese cutlery. Discover the key differences between these two knife cultures and learn when, why, and how to use each blade to achieve perfect cuts.

What You’ll Learn:

  • A refresher on basic knife skills with a focus on precision and efficiency.
  • Advanced techniques, including fine garnish work to elevate your plating.
  • Hands-on practice with up to six ZWILLING and MIYABI knife series, including the exceptional Kramer Carbon and Kramer Damascus blades.

Whether you’re looking to build confidence or are an experienced cook wanting to master new techniques, this class is designed to help you up your game in the kitchen.

About Your Instructor

Originally from the Netherlands, Bernard Janssen is the Executive Chef and Culinary Program Manager for ZWILLING J.A. Henckels, where he launched the first U.S. ZWILLING Cooking Studio in 2015. With over 25 years of global culinary experience, Bernard is a leading expert in kitchen knife skills and culinary education. He creates original recipes, leads hands-on cooking classes, and represents ZWILLING’s premium brands—including Staub, Demeyere, Miyabi, and Ballarini—at events and trainings across the country. Known for his inventive flavor pairings and elegant plating, Bernard now resides with his family along the Hudson River in New York.
