  • 1 Pacific red salmon fillet, skin removed, cut into 1-centimeter slices
  • Olive oil, for brushing
  • Handful of toasted almonds, roughly chopped
  • 2 limes, halved
  • For the guacamole:
    • 1 ripe avocado, peeled and pitted
    • Pinch of green chili pepper, finely chopped
    • 3 cherry tomatoes, diced
    • 1 small red onion, finely diced
    • Handful of fresh cilantro, chopped
    • Salt and pepper to taste
  • For the passion fruit syrup:
    • 1 cup muscovado sugar
    • Juice of 1 passion fruit
    • 1 cup water
  • Salmon roe, for garnish

  1. Preheat the grill or griddle pan on medium heat for about 15 minutes.
  2. Brush the salmon slices with olive oil and sprinkle them with the chopped almonds. Place the salmon slices on the preheated griddle and cook for approximately 5 minutes on each side until they turn golden brown.
  3. While the salmon is grilling, let's prepare the guacamole. Using a sharp knife, score the skin of the avocado in multiple places, then twist it to separate the halves. Remove the pit with a knife and scoop out the avocado flesh with a spoon. Transfer it to a bowl and mash it with a fork.
  4. Add the finely chopped green chili pepper, diced cherry tomatoes, finely diced red onion, and chopped cilantro to the mashed avocado. Mix everything together until well combined. Season with salt and pepper to taste.
  5. Place the halved limes on the griddle and grill them until they develop a slightly charred appearance.
  6. Now, let's prepare the passion fruit syrup. In a small saucepan, combine the muscovado sugar, passion fruit juice, and water. Bring the mixture to a boil over medium heat and let it simmer for about 15 minutes until it thickens slightly.
  7. It's time to plate our masterpiece! Arrange the grilled salmon slices over a bed of guacamole. Drizzle the passion fruit syrup over the salmon, squeeze some grilled lime juice on top, and garnish with fresh cilantro. Finally, sprinkle some salmon roe for an elegant finishing touch.
  8. Serve your Grilled Pacific Red Salmon immediately and enjoy the explosion of flavors with every bite.
