Mrs. Anderson's Dough Proofing Cloth supports, forms, and proofs bread dough for making long loaves of bread, breadsticks, and up to 6-7 baguettes at once. It absorbs excess moisture from the dough without drying it out for the best chewy, crusty bread results. The thick, stiff cloth creates and holds wavy creases that force rising dough upwards and to maintain shaped loaves while they proof. It releases easily without it warping or sticking to the cloth. Flour the cloth lightly and evenly. Too much flour will spoil the texture and appearance of bread crust. Fold the cloth into a series of wavy creases to cradle dough while it proofs. Shape dough and transfer it into the folds, cover it, and allow it to rise. When dough is ready to bake, move it into a baguette pan or onto a baking stone. It's also ideal for covering proofing bowls. After use, brush off excess flour from the cloth and allow it to air dry. If dough has stuck to the cloth, let it air dry and scrape it off gently. Never wash the cloth. Water will wash away the yeasty, floury surface required for making unique crusty artisan bread. Once the cloth is perfectly dry, roll it up and store it away.
